  • 500 g boneless, skinless chicken thighs
  • 3 tbsp soy sauce
  • 2 tbsp cornstarch

  • 1 red bell pepper
  • 1 green bell pepper
  • 1 yellow onion
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 5 dried red chilies
  • 2 tbsp hot chili sauce (like Sriracha)
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 3 scallions, sliced
  • 1 tbsp sesame seeds
  • 4 cups steamed rice (for serving)

Directions

Step 1

Slice the boneless, skinless chicken thighs into bite-sized strips and place them into a medium bowl.

Step 2

In the bowl with the chicken, add 2 tbsp soy sauce and cornstarch. Stir to evenly coat the chicken and set aside to marinate for 10 minutes.

Step 3

While the chicken marinates, thinly slice the red bell pepper, green bell pepper, and yellow onion. Set these vegetables aside.

Heat 2 tbsp of vegetable oil in a large wok or skillet over medium-high heat. Once hot, add the chicken in a single layer. Cook for 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Remove the chicken from the wok and set aside.

Return the cooked chicken to the wok and toss everything together.

In a small bowl, whisk together 1 tbsp soy sauce, hot chili sauce, honey, rice vinegar, and sesame oil. Pour this sauce over the chicken and vegetables in the wok.

Stir-fry for another 2 minutes, ensuring the sauce evenly coats all ingredients and everything is heated through.

Remove from heat and garnish the dish with sliced scallions and sesame seeds.
