Ingredients

  • 1 lb ground beef
  • 1 lb ground pork
  • 2 tbsp olive oil
  • 1 medium yellow onion
  • 4 cloves garlic cloves
  • 1 red bell pepper
  • 2 habanero peppers
  • 2 tbsp tomato paste
  • 28 oz canned diced tomatoes
  • 15 oz canned kidney beans
  • 15 oz canned black beans
  • 2 cups beef broth
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 2 tsp smoked paprika
  • 1 tsp ground cayenne pepper
  • 1 tsp dried oregano
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 oz dark chocolate
  • 0.25 cup fresh cilantro
  • 1 lime

Directions

Step 1

Heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium heat.

Step 2

Finely dice the onion and mince the garlic. Dice the red bell pepper and finely chop the habanero peppers, being careful to avoid touching your face. Add the vegetables to the pot and sauté until softened, about 5 minutes.

Step 3

Add ground beef and ground pork to the pot. Cook, breaking it apart with a wooden spoon, until browned and fully cooked, about 7-10 minutes. Drain any excess fat if needed.

Step 4

Stir in 2 tablespoons of tomato paste, cooking for 1-2 minutes to deepen the flavor.

Step 5

Add the canned diced tomatoes (with juices), kidney beans, black beans, and beef broth. Stir to combine.

Step 6

Mix in chili powder, cumin, smoked paprika, cayenne pepper, oregano, salt, and black pepper. Bring the mixture to a simmer.

Step 7

Reduce the heat to low, cover, and let the chili cook for 1 hour, stirring occasionally to prevent sticking.

Step 8

After 1 hour, stir in 1 ounce of dark chocolate until melted, which will add richness to the chili.

Step 9

Taste and adjust seasoning as needed (add more salt, spice, or seasonings to your preference). Cook uncovered for another 15-20 minutes to thicken the chili to your desired consistency.

Step 10

Chop the fresh cilantro and cut the lime into wedges. Serve the chili hot, garnished with a sprinkle of cilantro and a squeeze of fresh lime juice.
