  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley (optional, for garnish)

Directions

Step 1

Preheat the oven to 180°C (350°F). Peel and cut 10 garlic cloves into thick slices, leaving 2 cloves whole.

Place the sliced garlic on a sheet of aluminum foil. Drizzle with 1 tablespoon of olive oil, sprinkle with a pinch of salt, and wrap the garlic tightly in the foil. Roast in the oven for 15-20 minutes until golden and soft.

While the garlic roasts, bring a large pot of salted water to a boil and cook the spaghetti until al dente according to package instructions. Reserve 1 cup of pasta cooking water before draining.

In a large skillet over medium heat, add the remaining olive oil (3 tablespoons). Mince the 2 whole garlic cloves and sauté them in the oil along with the crushed red pepper flakes for 1-2 minutes until fragrant but not brown.
