Ingredients

  • 2 cups Whole wheat pastry flour
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 3 Large ripe bananas
  • 2 large Eggs
  • 0.5 cup Pure maple syrup
  • 0.25 cup Olive oil
  • 1 teaspoon Vanilla extract
  • 0.5 cup Chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Lightly grease a 9x5-inch loaf pan or line it with parchment paper.

Step 2

In a medium bowl, whisk together the whole wheat pastry flour, baking soda, salt, and cinnamon. Set aside.

Step 3

In a large bowl, mash the bananas with a fork until smooth. Add the eggs, maple syrup, olive oil, and vanilla extract, and whisk until fully combined.

Step 4

Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix.

Step 5

If using walnuts, fold them into the batter at this stage.

Step 6

Pour the batter into the prepared loaf pan, spreading it evenly.

Step 7

Bake in the preheated oven for 50 minutes, or until a toothpick inserted into the center comes out clean.

Step 8

Remove the banana bread from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely before slicing and serving.
