Ingredients

  • 1.5 cups Whole wheat flour
  • 1 cup Oat bran
  • 0.5 cup Wheat bran
  • 0.25 cup Skim milk powder
  • 3 large Egg whites
  • 0.5 cup Unsweetened applesauce
  • 0.25 cup Honey
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Cinnamon
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0.25 cup Chopped dried fruit (optional, e.g., raisins or cranberries)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large mixing bowl, combine the whole wheat flour, oat bran, wheat bran, skim milk powder, cinnamon, baking powder, and salt. Mix well to evenly distribute the dry ingredients.

Step 3

In a separate bowl, whisk together the egg whites, unsweetened applesauce, honey, and vanilla extract until thoroughly combined.

Step 4

Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined. If using dried fruit, fold it into the batter at this stage.

Step 5

Using a tablespoon or a small cookie scoop, drop rounded spoonfuls of the batter onto the prepared baking sheet, spacing them about 2 inches apart.

Step 6

Flatten the tops of the cookies slightly with the back of a spoon or your fingers to ensure even cooking.

Step 7

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the cookies feel firm to the touch.

Step 8

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Step 9

Store the cookies in an airtight container at room temperature for up to 1 week.
