  • 4 cups Dr Pepper soda
  • 3 cups Granulated sugar
  • 1 packet (1.75 oz) Powdered fruit pectin
  • 2 tablespoons Lemon juice

Directions

Step 1

Pour the Dr Pepper soda into a large, heavy-bottomed saucepan and bring to a simmer over medium heat to reduce some carbonation. Simmer for about 2-3 minutes, stirring occasionally.

Add the powdered fruit pectin and whisk until it is fully dissolved.

Step 3

Bring the mixture to a rolling boil over medium-high heat, stirring frequently to prevent sticking.

Step 4

Once the mixture is boiling, add the granulated sugar all at once and stir until dissolved completely.

Add the lemon juice and continue to stir. Allow the mixture to return to a full rolling boil and boil hard for 1 minute while stirring continuously.

Remove the saucepan from heat and skim off any foam that forms on the surface of the jelly.

Carefully ladle the hot jelly into sterilized glass jars, leaving about 1/4-inch headspace. Wipe the jar rims clean with a damp cloth and seal with sterilized lids and bands.

Process the jars in a boiling water bath for 10 minutes to ensure they are properly sealed and safe for storage.

Remove the jars from the water bath and allow them to cool to room temperature. Check that the lids have sealed properly by pressing the center of each lid; it should not flex up and down.

Store the sealed jars in a cool, dark place for up to 12 months. Once opened, refrigerate and consume within 3 weeks.
