  • 0.25 cups All-purpose flour

  • 1 Yellow onion, diced
  • 3 Garlic cloves, minced
  • 4 Carrots, peeled and cut into chunks
  • 3 Russet potatoes, peeled and cubed
  • 3 Celery stalks, chopped
  • 4 cups Beef broth
  • 1 cups Dr Pepper (regular, not diet)
  • 2 tablespoons Tomato paste
  • 1 tablespoons Worcestershire sauce
  • 2 Bay leaves
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

In a large mixing bowl, combine the beef stew meat, flour, salt, and pepper. Toss until the beef is evenly coated.

Step 2

Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the beef in batches, searing the pieces for 3-4 minutes per side until browned. Remove and set aside.

Step 3

In the same pot, add the diced onion and sauté for 5 minutes until softened. Add the minced garlic and cook for an additional minute, stirring frequently.

Return the beef to the pot and add the carrots, potatoes, and celery. Stir to combine.
