  • 14 ounces diced tomatoes (with juice)
  • 1 cup kidney beans, drained and rinsed
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 0.5 cup sour cream
  • 2 stalks green onions, sliced
  • 2 tablespoons fresh cilantro, chopped

Directions

Step 1

Heat the olive oil in a large pot or deep skillet over medium heat.

Add the diced onion and sauté for 3-4 minutes, until softened and fragrant.

Stir in the minced garlic and cook for another 1-2 minutes.
