Ingredients

  • 4 large russet potatoes
  • 4 tablespoons unsalted butter
  • 0.5 cup milk
  • 2 teaspoons salt
  • 1 teaspoons black pepper
  • 1 tablespoon olive oil
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1.5 pounds ground beef or ground lamb
  • 2 medium carrots, diced
  • 1 cup frozen peas
  • 2 tablespoons tomato paste
  • 0.5 cup beef or chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 0.5 teaspoon paprika
  • 1 cup cheddar cheese, shredded (optional)

Directions

Step 1

Peel and dice the potatoes into even-sized chunks. Place them in a large pot, cover with water, and add a pinch of salt.

Step 2

Bring the pot of water to a boil, then reduce heat to simmer and cook potatoes for 15-20 minutes, or until fork-tender.

Step 3

While the potatoes cook, preheat the oven to 400°F (200°C).

Step 4

Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes.

Step 5

Stir in the garlic and cook for another 30 seconds, then add the ground beef or lamb. Cook until browned and fully cooked through, breaking up any large chunks with a spoon.

Step 6

Drain any excess grease from the skillet. Add the diced carrots, and cook for 5 minutes, until slightly softened.

Step 7

Stir in the tomato paste, Worcestershire sauce, thyme, paprika, and broth. Let the mixture simmer for 5 minutes to thicken slightly.

Step 8

Add the frozen peas to the skillet, stir well, and season to taste with additional salt and pepper if desired. Remove from heat.

Step 9

Drain the cooked potatoes and return them to the pot. Mash with butter, milk, salt, and black pepper until creamy and smooth.

Step 10

Spread the meat and vegetable mixture evenly into a large baking dish. Top with the mashed potatoes, spreading them out evenly to cover the filling.

Step 11

Optionally, sprinkle shredded cheddar cheese over the mashed potatoes for an extra layer of flavor.

Step 12

Bake the shepherd's pie in the preheated oven for 20 minutes, or until the top is golden and bubbly.

Step 13

Let the dish rest for 5 minutes before serving. Enjoy your Down Home Shepherd's Pie!
