Ingredients

  • 2 pounds ground beef (80% lean, 20% fat)
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 0.5 teaspoon freshly ground black pepper
  • 0.5 teaspoon paprika (optional, for a smoky flavor)
  • 6 pieces hamburger buns
  • 6 slices cheese slices (optional)
  • 2 tablespoons butter (for toasting buns)
  • 6 pieces lettuce leaves
  • 6 slices tomato slices
  • 12 slices pickles
  • 0.5 cup ketchup
  • 0.25 cup mustard
  • 0.25 cup mayonnaise

Directions

Step 1

Preheat your grill to medium-high heat (about 375°F to 400°F). If using a charcoal grill, set up a two-zone fire for direct and indirect cooking.

Step 2

In a large mixing bowl, combine ground beef, Worcestershire sauce, garlic powder, onion powder, kosher salt, black pepper, and paprika (if using). Mix gently with your hands until just combined. Be careful not to overmix, as this can make the burgers tough.

Step 3

Divide the meat mixture into 6 equal portions and shape each into a patty about ¾-inch thick. Make an indentation in the center of each patty with your thumb to prevent it from puffing up during cooking.

Step 4

Place the patties on the preheated grill over direct heat. Grill for about 4–5 minutes per side, flipping once, until they reach an internal temperature of 160°F for medium doneness. Avoid pressing down on the patties with a spatula, as this can cause them to lose juices.

Step 5

If adding cheese, place one slice on each patty during the last minute of cooking. Close the lid to let the cheese melt.

Step 6

While the burgers are grilling, toast the hamburger buns. Spread butter on the cut sides of each bun, then place them on the grill for 1–2 minutes until golden brown and slightly crisp.

Step 7

Assemble the burgers by placing a lettuce leaf, tomato slice, and two pickle slices on the bottom half of each bun. Add the grilled patty and top with your desired condiments such as ketchup, mustard, or mayonnaise. Place the top bun on each burger.

Step 8

Serve immediately with your favorite side dishes like fries, potato salad, or coleslaw. Enjoy your Down Home Grilled Hamburgers!
