Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground beef (85% lean)
  • 1 large yellow onion, diced
  • 1 medium green bell pepper, diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 15-ounce can diced tomatoes (with juice)
  • 1 15-ounce can kidney beans, drained and rinsed
  • 1 15-ounce can black beans, drained and rinsed
  • 1.5 cups beef broth
  • 2 tablespoons chili powder
  • 1.5 teaspoons ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.25 teaspoon crushed red pepper flakes (optional)
  • 1 cup cheddar cheese, shredded (for garnish)
  • 0.5 cup sour cream (for garnish)
  • 3 stalks green onions, sliced (for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium-high heat.

Step 2

Add the ground beef, breaking it apart with a spoon, and cook until browned, about 5-7 minutes.

Step 3

Remove the beef from the pot and drain excess fat if needed. Set aside.

Step 4

In the same pot, lower the heat to medium and add the diced onion and green bell pepper. Cook until softened, about 5 minutes.

Step 5

Stir in the garlic and tomato paste, cooking for 1 minute until fragrant.

Step 6

Add the browned ground beef back to the pot, then stir in the diced tomatoes, kidney beans, black beans, and beef broth.

Step 7

Sprinkle in the chili powder, ground cumin, paprika, oregano, sugar, salt, black pepper, and crushed red pepper flakes (if using). Stir to combine.

Step 8

Bring the chili to a gentle boil, then reduce the heat to low and cover. Let it simmer for 30 minutes, stirring occasionally.

Step 9

Taste and adjust seasoning as needed, adding more salt or spices to personal preference.

Step 10

Serve hot with garnishes like shredded cheddar cheese, sour cream, and sliced green onions.
