Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 3 cloves garlic cloves, minced
  • 2 cups fresh tomatoes, diced
  • 0.5 cup sun-dried tomatoes, chopped
  • 0.5 cup chicken broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 0.25 cup heavy cream
  • 0.25 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

Step 1

Season the chicken breasts with salt and pepper on both sides.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 4-5 minutes on each side, or until golden brown. Remove the chicken from the skillet and set aside.

In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant.
