Ingredients

  • 200 grams Brie cheese
  • 60 grams Sun-dried tomatoes (in oil, drained)
  • 1 large Fresh tomato
  • 6 leaves Fresh basil leaves
  • 2 tablespoons Extra virgin olive oil
  • 4 slices Sourdough bread
  • 2 tablespoons Butter (softened)
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper (freshly ground)

Directions

Step 1

Slice the Brie cheese into thin pieces (approximately 0.5 cm thick) and set aside.

Step 2

Chop the sun-dried tomatoes into small slices or chunks if they are large.

Step 3

Slice the fresh tomato crosswise into thin rounds.

Step 4

Spread a thin layer of butter on one side of each sourdough bread slice. This will be the outer side of the sandwich during cooking.

On the non-buttered side of two bread slices, layer the sandwich fillings: start with a few slices of Brie, then add the fresh tomato slices, a sprinkle of salt and black pepper, the chopped sun-dried tomatoes, and fresh basil leaves. Add another layer of Brie slices on top for extra creaminess.
