  • 8 slices Thick-cut bacon
  • 2 medium Ripe tomatoes
  • 2 tablespoons Brown sugar
  • 1 tablespoon Apple cider vinegar
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 cup Mayonnaise
  • 0.25 teaspoon Garlic powder
  • 4 whole Crisp lettuce leaves
  • 4 slices Sourdough bread
  • 2 tablespoons Butter

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

Step 2

Take each slice of thick-cut bacon and gently twist it along its length to form a spiraled shape. Place the twisted bacon on the prepared baking sheet with space in between each piece.

Step 3

Bake the bacon in the preheated oven for 18-20 minutes, or until crispy. Flip halfway through for even cooking. Once done, transfer to a plate lined with paper towels to drain excess grease.

While the bacon cooks, prepare the tomato jam. Dice the ripe tomatoes into small chunks.

In a small saucepan over medium heat, combine the diced tomatoes, brown sugar, apple cider vinegar, salt, and black pepper. Simmer for 8-10 minutes, stirring occasionally, until the mixture thickens and resembles a jam-like texture. Remove from heat and let it cool slightly.

In a small bowl, mix the mayonnaise and garlic powder to make a garlic mayo. Set aside.
