Ingredients

  • 2.5 cups All-purpose flour
  • 2 cups Granulated sugar
  • 1 cup Unsalted butter
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 4 large Eggs
  • 1 cup Whole milk
  • 2 teaspoons Vanilla extract
  • 0.5 cups Dark rum
  • 1 cup Chopped pecans or walnuts (optional)
  • 2 tablespoons Powdered sugar (for garnish)
  • 0.25 cups Dark rum (for glaze)
  • 0.25 cups Unsalted butter (for glaze)
  • 0.5 cups Granulated sugar (for glaze)
  • 2 tablespoons Water (for glaze)

Directions

Step 1

Preheat the oven to 325°F (160°C). Grease and flour a Bundt pan. Optionally, sprinkle chopped pecans or walnuts evenly in the bottom of the pan.

Step 2

In a medium bowl, sift together the flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, cream the butter and sugar together until light and fluffy. Beat in the eggs one at a time, ensuring each is incorporated before adding the next.

Step 4

Mix in the vanilla extract and dark rum. Gradually alternate adding the flour mixture and the milk to the butter mixture, starting and ending with the flour. Continue mixing until well combined.

Step 5

Pour the batter evenly into the prepared Bundt pan. Smooth the top with a spatula.

Step 6

Bake in the preheated oven for 55-60 minutes, or until a toothpick inserted into the center comes out clean.

Step 7

While the cake is baking, prepare the glaze: In a small saucepan, combine butter, sugar, water, and dark rum. Bring the mixture to a boil over medium heat, stirring to dissolve the sugar. Reduce heat and simmer for 2-3 minutes. Remove from heat and let cool slightly.

Step 8

Once the cake is done, remove it from the oven and allow it to cool in the pan for 10-15 minutes. Then, invert the cake onto a serving plate.

Step 9

Using a skewer or toothpick, poke small holes across the surface of the cake. Slowly pour the glaze over the cake, allowing it to soak in evenly.

Step 10

Allow the cake to cool completely before garnishing with powdered sugar. Serve and enjoy!
