Ingredients

  • 500 g Sweet potatoes
  • 500 g Potatoes (waxy variety like Yukon Gold)
  • 250 g Halloumi cheese
  • 3 tbsp Olive oil
  • 2 Garlic cloves
  • 2 tsp Dried oregano
  • 1 tsp Smoked paprika
  • 1 tbsp Fresh thyme
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 250 ml Vegetable stock

Directions

Step 1

Preheat the oven to 200°C (390°F).

Step 2

Peel the sweet potatoes and regular potatoes. Slice both into thin rounds, approximately 3-4 mm thick.

Step 3

Slice the halloumi cheese into 0.5 cm thick slices and set aside.

Step 4

Peel and mince the garlic cloves.

Step 5

In a small bowl, mix the olive oil, garlic, dried oregano, smoked paprika, salt, and pepper.

Grease a baking dish with a small amount of the olive oil mixture.

Step 7

Start layering the sliced sweet potatoes, regular potatoes, and halloumi in the baking dish. Alternate layers for a colorful presentation and even distribution of flavors.
