Ingredients

  • 250 grams fresh peas
  • 250 grams frozen peas
  • 30 grams butter
  • 1 clove garlic
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh mint leaves

Directions

Step 1

Bring a medium pot of water to a boil and add a pinch of salt.

Step 2

Add the fresh peas to the boiling water and blanch for 2-3 minutes, or until tender but still bright green.

Step 3

Using a slotted spoon, transfer the fresh peas to a bowl of ice water to stop the cooking process and preserve their color. Drain and set aside.

Step 4

Add the frozen peas to the same pot of boiling water and cook for 2-3 minutes, then drain and set aside.

Step 5

In a small skillet, melt the butter over medium heat and sauté the garlic clove (minced) until fragrant, about 30 seconds to 1 minute.
