Ingredients

  • 2 pounds Russet potatoes
  • 4 tablespoons Unsalted butter
  • 1 large Yellow onion
  • 1 tablespoon Olive oil
  • 0.5 cup Heavy cream
  • 4 stalks Green onions (scallions), thinly sliced
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 0.25 cup Grated Parmesan cheese (optional)

Directions

Step 1

Peel and cube the potatoes into 1-inch pieces. Rinse under cold water to remove excess starch.

Step 2

Place the potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Cook for 15-20 minutes or until the potatoes are fork-tender. Drain and set aside.

While the potatoes cook, slice the yellow onion into thin strips.
