  • 4 large eggs
  • 0.75 cup freshly squeezed lemon juice
  • 2 tablespoons lemon zest (from 2 large lemons)
  • 0.25 cup powdered sugar (for garnish)

Directions

Step 1

Preheat the oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal, and lightly grease the paper.

Step 2

In a medium bowl, combine the melted butter, granulated sugar, all-purpose flour, and salt for the crust. Mix until a crumbly dough forms.

Press the crust mixture firmly into the bottom of the prepared pan, creating an even layer. Use the bottom of a measuring cup or your hands to flatten it well.

Bake the crust in the preheated oven for 18-20 minutes, or until the edges are lightly golden. Remove from the oven and allow to cool slightly while you prepare the filling.
