  • 1 tablespoon Fresh ginger, grated
  • 0.5 cup Milk
  • 1.5 cups Carrots, finely grated
  • 0.25 cup Crystallized ginger, finely chopped
  • 0.5 cup Walnuts or pecans, chopped (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a jumbo muffin tin with 6 large paper liners, or grease the cups well.
