Ingredients

  • 1.75 cups all-purpose flour
  • 0.75 cups unsweetened cocoa powder (Dutch-processed)
  • 2 cups granulated sugar
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 0.5 cups vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup dark chocolate chips
  • 0.75 cups heavy cream
  • 0.5 cups dark chocolate (chopped)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans and line the bottoms with parchment paper for easy removal.

Step 2

In a large mixing bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt. Whisk until evenly combined.

Step 3

In a separate medium bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract until smooth.

Step 4

Gradually add the wet ingredients to the dry ingredients, stirring until combined. The batter will be thick at this stage.

Step 5

Slowly pour in the boiling water, mixing continuously to avoid lumps. The batter will become very thin—this is normal.

Step 6

Divide the batter evenly between the prepared cake pans. Tap the pans on the countertop a few times to release any air bubbles.

Step 7

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

Step 8

Remove the cakes from the oven and allow them to cool in the pans for 10 minutes. Then, turn them out onto a wire rack to cool completely.

Step 9

For the glaze, heat the heavy cream in a small saucepan over medium heat until it begins to steam but does not boil.

Step 10

Remove the saucepan from the heat and stir in the dark chocolate chips and chopped dark chocolate. Let the mixture sit for 2 minutes before whisking until smooth and glossy.

Step 11

Place one cake layer on a serving plate. Spread a thin layer of chocolate glaze over the top.

Step 12

Add the second layer of cake and pour the remaining glaze over the top, letting it drip down the sides for a dramatic effect.

Step 13

Allow the cake to set for at least 30 minutes before cutting and serving. Enjoy your Double Dark Chocolate Cake!
