  • 2 large Eggs
  • 1 cup Whole milk
  • 0.5 cups Vegetable oil
  • 2 teaspoons Vanilla extract
  • 1 cup Boiling water
  • 1 cups Unsalted butter (softened)
  • 3.5 cups Powdered sugar
  • 0.75 cups Unsweetened cocoa powder (for frosting)
  • 0.25 cups Heavy cream
  • 0.5 cups Chocolate chips (optional, for topping)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans. Alternatively, line the bottoms with parchment paper for easy removal.

Step 2

In a large mixing bowl, sift together the all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.

Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients, and beat until the batter is smooth and combined.

Gradually add the boiling water to the batter, mixing slowly. The batter will be thin—this is normal.

Place the second cake layer on top and apply frosting to the top and sides of the cake, smoothing it with a spatula.
