Ingredients

  • 1 cup Dried cherries
  • 1 cup Cabernet Sauvignon (or other red wine)
  • 0.75 cup Unsalted butter, softened
  • 0.5 cup Granulated sugar
  • 0.5 cup Brown sugar, packed
  • 1 Large egg
  • 1 teaspoon Vanilla extract
  • 1.5 cups All-purpose flour
  • 0.5 cup Unsweetened cocoa powder
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 1 cup Semi-sweet chocolate chunks

Directions

Step 1

Place the dried cherries in a small saucepan and pour the Cabernet Sauvignon over them. Heat over medium-low heat until the wine begins to simmer, then reduce the heat and let the cherries soak for 10 minutes. Remove from heat, drain the cherries, and set aside to cool.

Step 2

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 3

In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.

Step 4

Add the egg and vanilla extract to the butter mixture, and beat until fully incorporated.

Step 5

In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt.

Step 6

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Step 7

Fold in the soaked cherries and semi-sweet chocolate chunks until evenly distributed throughout the dough.

Step 8

Scoop heaping tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 9

Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers remain slightly soft.

Step 10

Remove the cookies from the oven and allow them to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Step 11

Serve and enjoy these decadent cookies with a glass of milk or a complementary glass of Cabernet!
