  • 450 grams elbow macaroni
  • 4 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 3 cups whole milk
  • 2 cups sharp cheddar cheese, shredded
  • 1.5 cups mozzarella cheese, shredded
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon paprika (optional)
  • 0.5 cup bread crumbs (optional)

Directions

Step 1

Bring a large pot of water to a boil. Add a generous pinch of salt and cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.

In a large saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for 1-2 minutes, stirring constantly to create a roux.
