  • 1 cups blueberries (fresh or frozen)
  • 1 cups strawberries, chopped
  • 2 tablespoons lemon juice
  • 2 teaspoons cornstarch
  • 0.5 cups brown sugar
  • 0.5 cups rolled oats
  • 1 teaspoons vanilla extract

Directions

Step 1

Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal.

Step 2

In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Mix well.

Step 3

Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, blend the butter into the dry ingredients until the mixture resembles coarse crumbs.

Step 4

Press 2/3 of the crust mixture firmly into the bottom of the prepared baking dish. Reserve the remaining 1/3 for the streusel topping.
