Ingredients

  • 1 lb Sirloin steak
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 2 tbsp Olive oil
  • 2 tbsp Unsalted butter
  • 1 large Yellow onion, finely diced
  • 3 Garlic cloves, minced
  • 2 medium Carrots, diced
  • 2 Celery stalks, diced
  • 0.25 cup All-purpose flour
  • 4 cups Beef broth
  • 1 cup Heavy cream
  • 2 medium Russet potatoes, peeled and diced
  • 1 tsp Fresh thyme leaves
  • 2 tbsp Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Season the sirloin steak with 1/2 teaspoon of salt and 1/2 teaspoon of black pepper on all sides.

Step 2

In a large pot or Dutch oven, heat the olive oil over medium-high heat. Sear the steak for 2-3 minutes per side until browned. Remove the steak from the pot and set aside to rest.

Step 3

Reduce the heat to medium and add the butter to the same pot. Once melted, add the diced onion, minced garlic, carrots, and celery. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are softened.

Step 4

Sprinkle the flour over the sautéed vegetables and stir well to coat. Cook for 1-2 minutes to remove the raw flour taste.
