Ingredients

  • 5 lbs Beef brisket
  • 2 tbsp Kosher salt
  • 1 tbsp Black pepper
  • 1 tbsp Paprika
  • 1 tbsp Garlic powder
  • 1 tbsp Onion powder
  • 1 tbsp Brown sugar
  • 2 tbsp Olive oil
  • 1 cup Apple cider vinegar
  • 1 cup Tomato ketchup
  • 2 tbsp Worcestershire sauce
  • 2 tbsp Molasses
  • 1 tbsp Dijon mustard
  • 1 tsp Smoked paprika
  • 0.5 tsp Cayenne pepper
  • 1 cup Chicken or beef stock

Directions

Step 1

Preheat your smoker or oven to 250°F (121°C).

Step 2

Prepare the brisket by trimming excess fat, leaving around 1/4-inch layer for flavor and moisture.

Step 3

In a small bowl, combine kosher salt, black pepper, paprika, garlic powder, onion powder, and brown sugar to create the dry rub.

Step 4

Drizzle olive oil over the brisket, then generously coat the brisket with the dry rub, pressing it firmly into the meat to create a flavorful crust.

Step 5

Place the brisket on the smoker or in the oven, fat-side up. If using a smoker, use hickory or oak wood for the best flavor.

Step 6

Cook the brisket low and slow for 6-8 hours, or until the internal temperature reaches 195-205°F (90-96°C). Use a meat thermometer to check for doneness. During cooking, spritz the brisket occasionally with apple cider vinegar to keep it moist.

Step 7

While the brisket cooks, prepare the barbecue sauce. In a medium saucepan, combine apple cider vinegar, tomato ketchup, Worcestershire sauce, molasses, Dijon mustard, smoked paprika, cayenne pepper, and chicken or beef stock.

Step 8

Bring the sauce mixture to a gentle boil, then reduce the heat to low and simmer for 15-20 minutes, stirring occasionally, until the sauce thickens slightly.

Step 9

Once the brisket is done, remove it from the heat and wrap it in aluminum foil. Let it rest for at least 30 minutes to allow the juices to redistribute.

Step 10

Slice the brisket against the grain into thin slices to ensure tenderness.

Step 11

Serve the brisket with the homemade barbecue sauce on the side or poured generously over the slices.
