Ingredients

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 cup carrots, sliced
  • 1 cup zucchini, sliced
  • 1 cup button mushrooms, sliced
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1.5 cups whole milk
  • 1 cup shredded cheddar cheese
  • 0.5 cup grated Parmesan cheese
  • 0.5 cup panko breadcrumbs
  • 1 tablespoon olive oil
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish and set aside.

Step 2

Bring a large pot of salted water to a boil. Add the broccoli, cauliflower, carrots, and zucchini, and blanch for 3-4 minutes until slightly tender. Drain and set aside.

Step 3

In a large skillet over medium heat, melt the butter. Stir in the flour and cook for 1-2 minutes, whisking constantly, to create a roux.

Step 4

Gradually pour in the milk, whisking constantly to avoid lumps. Cook until the mixture thickens, about 3-5 minutes.

Step 5

Reduce heat to low and stir in the shredded cheddar cheese, garlic powder, onion powder, salt, and black pepper. Mix until smooth and creamy.

Step 6

Add the blanched vegetables and sliced mushrooms to the cheese sauce. Toss until the vegetables are evenly coated.

Step 7

Pour the vegetable mixture into the prepared baking dish, spreading it out evenly.

Step 8

In a small bowl, mix together the panko breadcrumbs, grated Parmesan cheese, and olive oil. Sprinkle this mixture evenly over the casserole.

Step 9

Bake in the preheated oven for 25-30 minutes, or until the topping is golden brown and crispy.

Step 10

Remove from oven and let cool for 5-10 minutes before serving. Enjoy your hearty and flavorful casserole!
