Ingredients

  • 6 large Russet potatoes
  • 4 tablespoons Butter
  • 3 tablespoons All-purpose flour
  • 2 cups Milk
  • 2 cups Cheddar cheese, shredded
  • 4 ounces Cream cheese
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Paprika
  • 0.5 cup Parmesan cheese, grated
  • 2 tablespoons Fresh parsley, chopped
  • 1 as needed Nonstick cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel and thinly slice the russet potatoes into 1/8-inch thick rounds. Set them aside in a bowl of cold water to prevent browning.

Step 3

In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes to form a roux.

Step 4

Gradually add the milk to the saucepan, whisking continuously to prevent lumps. Cook for 3-4 minutes until the mixture thickens into a smooth sauce.

Step 5

Reduce the heat to low and stir in the shredded cheddar cheese and cream cheese until melted and fully incorporated.

Step 6

Season the cheese sauce with salt, black pepper, garlic powder, and paprika. Remove the saucepan from heat.

Step 7

Grease a 9x13-inch baking dish with nonstick cooking spray.

Step 8

Drain and pat the potato slices dry with a clean kitchen towel. Layer 1/3 of the potato slices on the bottom of the prepared baking dish.

Step 9

Pour 1/3 of the cheese sauce evenly over the potatoes. Repeat the layering process with the remaining potatoes and cheese sauce, finishing with a layer of sauce on top.

Step 10

Sprinkle the grated Parmesan cheese over the top layer of cheese sauce.

Step 11

Cover the baking dish with aluminum foil and bake in the preheated oven for 40 minutes.

Step 12

Remove the foil and bake for an additional 20 minutes, or until the potatoes are tender, the cheese is bubbly, and the top is golden brown.

Step 13

Let the dish cool for 5-10 minutes before serving. Garnish with fresh parsley and enjoy!
