Ingredients

  • 2 sheets puff pastry sheets
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 medium carrot, finely grated
  • 0.5 cup frozen peas
  • 1 medium potato, boiled and mashed
  • 0.75 cup cheddar cheese, grated
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon ground coriander
  • 0.25 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper, freshly ground
  • 1 egg, beaten (for egg wash)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Heat the olive oil in a medium skillet over medium heat. Add the chopped onion and garlic, sautéing until softened and fragrant, about 2-3 minutes.

Step 3

Add the grated carrot and frozen peas to the skillet, cooking for an additional 3-4 minutes until the vegetables are tender.

Step 4

Stir in the mashed potato, grated cheese, ground cumin, ground coriander, paprika, salt, and black pepper. Mix well to combine and then remove from heat. Allow the filling to cool slightly.

Step 5

Roll out the puff pastry sheets on a lightly floured surface and cut each sheet into 4 equal squares (you should have 8 squares total).

Step 6

Place a heaping tablespoon of the vegetable and cheese filling in the center of each square.

Step 7

Fold each square diagonally to form a triangle and press the edges firmly with a fork to seal.

Step 8

Brush the tops of each puff with the beaten egg to ensure a golden, glossy finish when baked.

Step 9

Transfer the puffs to the prepared baking sheet, spacing them evenly apart.

Step 10

Bake in the preheated oven for 20-25 minutes, or until the puffs are golden and flaky.

Step 11

Remove the puffs from the oven and let them cool slightly before serving. Enjoy them warm or at room temperature!
