Ingredients

  • 130 grams all-purpose flour
  • 100 grams granulated sugar
  • 1 teaspoon baking powder
  • 2 large eggs
  • 1 tablespoon honey
  • 50 milliliters water
  • 1 tablespoon vegetable oil
  • 200 grams sweetened red bean paste (anko)

Directions

Step 1

In a large mixing bowl, whisk together the eggs and granulated sugar until the mixture is slightly frothy and pale.

Step 2

Add the honey and whisk until thoroughly combined.

Step 3

Sift the all-purpose flour and baking powder into the egg mixture. Gently fold together until just combined.

Step 4

Gradually add the water while stirring to achieve a smooth batter. Let the batter rest for about 10 minutes.

Heat a non-stick frying pan over medium-low heat and lightly grease it with the vegetable oil.

Pour a small ladleful of batter (about 2 tablespoons) onto the frying pan to form a pancake approximately 8 cm in diameter. Cook until bubbles form on the surface and the edges become slightly dry, about 2 minutes.

Flip the pancake and cook for another 1-2 minutes until golden brown. Transfer to a plate and repeat with the remaining batter.

Repeat with the remaining pancakes and red bean paste.
