Ingredients

  • 4 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 6 large Yellow onions, thinly sliced
  • 1 teaspoon Salt
  • 1 teaspoon Granulated sugar
  • 1 cup Dry white wine
  • 8 cups Beef stock, high quality
  • 1 whole Bay leaf
  • 4 sprigs Fresh thyme
  • 0.5 teaspoon Black pepper, freshly ground
  • 8 pieces Baguette slices
  • 2 cups Gruyere cheese, grated

Directions

Step 1

In a large, heavy-bottomed pot or Dutch oven, heat the butter and olive oil over medium-low heat until the butter melts.

Step 2

Add the sliced onions to the pot, stirring well to coat them in the butter and oil. Sprinkle in the salt and sugar to help caramelize the onions.

Step 3

Cook the onions over low heat, stirring frequently, for about 40-45 minutes. They should become golden brown, soft, and deeply caramelized.

Step 4

Pour in the white wine to deglaze the pot, scraping up any browned bits from the bottom. Let it simmer for 3-4 minutes until slightly reduced.

Step 5

Add the beef stock, bay leaf, and thyme to the pot. Stir well to combine and bring to a low simmer. Cook uncovered for 25-30 minutes, allowing the flavors to develop.

Step 6

Remove the thyme sprigs and bay leaf from the pot. Taste the soup and adjust seasoning with additional salt and freshly ground black pepper as needed.

Step 7

While the soup simmers, preheat your oven to 375°F (190°C). Arrange the baguette slices on a baking sheet and toast them in the oven for about 5-7 minutes until crisp and lightly golden.

Step 8

Set your oven to broil. Ladle the hot soup into oven-safe bowls, leaving some space at the top. Place a slice or two of toasted baguette on top of the soup.

Step 9

Sprinkle a generous amount of grated Gruyere cheese over the bread, ensuring it covers the top of the bowl.

Step 10

Place the bowls on a baking sheet and transfer them carefully under the broiler. Broil for 2-3 minutes or until the cheese is melted, bubbly, and slightly golden.

Step 11

Remove from the oven carefully and let the soup cool for a minute before serving. Enjoy this rich, hearty French onion soup!
