  • 2 cups Shredded cooked chicken
  • 2 cups Shredded cheddar cheese
  • 1 cup Shredded Monterey Jack cheese
  • 2 cups Enchilada sauce (red or green)
  • 1 medium Diced onion
  • 2 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with a bit of olive oil or non-stick spray.

In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until softened and translucent.
