Ingredients

  • 300 grams egg noodles
  • 2 tablespoons sesame oil
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon dark soy sauce
  • 1 teaspoon sugar
  • 3 pieces garlic cloves
  • 1 inch ginger
  • 1 medium carrot
  • 1 medium red bell pepper
  • 150 grams broccoli florets
  • 3 stalks scallions
  • 1 tablespoon vegetable oil
  • 0.5 teaspoon chili flakes
  • 1 teaspoon toasted sesame seeds

Directions

Step 1

Cook the egg noodles according to the package instructions. Drain, rinse with cold water to prevent sticking, and set aside.

Step 2

In a small bowl, mix soy sauce, oyster sauce, dark soy sauce, and sugar until well combined. Set the sauce aside.

Step 3

Peel and mince the garlic cloves and ginger. Thinly slice the carrot, red bell pepper, and scallions. Cut the broccoli florets into bite-sized pieces.

Step 4

Heat a wok or large skillet over medium-high heat and add sesame oil. Once hot, add the minced garlic and ginger. Stir-fry for 1-2 minutes until fragrant.

Step 5

Add the carrot, red bell pepper, and broccoli to the wok. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

Step 6

Push the vegetables to one side of the wok and add the vegetable oil to the empty space. Add the cooked noodles and pour the prepared sauce over them. Toss everything together to coat the noodles and vegetables evenly.

Sprinkle the chili flakes over the mixture and stir-fry for another 2 minutes until everything is thoroughly heated.
