Ingredients

  • 1 kg pumpkin (butternut or similar)
  • 2 tablespoons olive oil

  • 100 grams blue cheese, crumbled
  • 12 pieces fresh sage leaves
  • 2 cloves garlic, minced
  • 0.5 cups Parmesan cheese, grated
  • 0.5 cups breadcrumbs
  • 2 tablespoons butter, melted

Directions

Step 1

Preheat your oven to 200°C (400°F).

Peel and cut the pumpkin into thin slices, about 5mm thick.

Toss the pumpkin slices with olive oil, salt, and pepper. Spread them evenly on a baking tray lined with parchment paper.

Roast the pumpkin in the preheated oven for 15–20 minutes or until just tender but not fully cooked. Remove from the oven and set aside.
