Ingredients

  • 12 ounces egg noodles
  • 2 tablespoons butter
  • 1 yellow onion, diced
  • 8 ounces button mushrooms, sliced
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1 cup chicken broth
  • 1.5 cups cheddar cheese, shredded
  • 12 ounces canned tuna, drained
  • 1 cup frozen green peas, thawed
  • 1 cup breadcrumbs
  • 0.5 cups parmesan cheese, grated
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cook the egg noodles in a large pot of boiling salted water according to package directions until al dente. Drain and set aside.

Step 3

Heat a large skillet over medium heat and melt the butter. Add the diced onion and cook for 2-3 minutes until softened.

Step 4

Add the sliced mushrooms to the skillet and cook for about 5 minutes until they release their moisture and begin to brown.

Step 5

Sprinkle the flour over the onion and mushroom mixture, stirring well to coat. Cook for 1 minute.

Step 6

Gradually whisk in the milk and chicken broth, stirring constantly to avoid lumps. Bring the mixture to a simmer and cook for 3-5 minutes until thickened.

Step 7

Stir in the cheddar cheese, tuna, green peas, salt, and black pepper. Mix well until the cheese is melted and evenly incorporated.

Step 8

Add the cooked egg noodles into the skillet and gently toss to coat the noodles in the creamy sauce.

Step 9

Pour the noodle mixture into a greased 9x13-inch baking dish, spreading evenly.

Step 10

In a small bowl, combine the breadcrumbs, parmesan cheese, and olive oil. Stir to combine and sprinkle the mixture over the casserole.

Step 11

Bake in the preheated oven for 20-25 minutes, or until the topping is golden brown and crispy.

Step 12

Remove from the oven, let cool for a few minutes, and serve warm.
