Ingredients

  • 2 medium Cucumber
  • 1 large Carrot
  • 200 grams Napa cabbage
  • 2 stalks Green onion
  • 50 grams Mung bean vermicelli (glass noodles)
  • 2 cloves Garlic
  • 2 tablespoons Soy sauce
  • 1 tablespoon Chinese black vinegar
  • 1 tablespoon Sesame oil
  • 1 teaspoon Sugar
  • 1 teaspoon Salt
  • 0.5 teaspoon Crushed red pepper flakes
  • 1 teaspoon Toasted sesame seeds
  • 1 tablespoon Peanut or vegetable oil

Directions

Step 1

Prepare the mung bean vermicelli by soaking it in hot water for 5 minutes or until soft. Drain and set aside.

Step 2

Cut the cucumber into thin matchstick-like strips. Peel and julienne the carrot into similar-sized strips. Thinly slice the Napa cabbage into shreds. Finely chop the green onions and mince the garlic.

Step 3

In a small bowl, prepare the dressing by mixing the soy sauce, Chinese black vinegar, sesame oil, sugar, salt, and crushed red pepper flakes. Stir well until the sugar dissolves.

Step 4

In a large mixing bowl, combine the cucumber, carrot, Napa cabbage, green onion, and softened mung bean vermicelli.

Step 5

Heat the peanut or vegetable oil until hot but not smoking, then pour it over the minced garlic in a heatproof bowl to release its aroma.

Step 6
