Ingredients

  • 500 grams Large shrimp, peeled and deveined
  • 2 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 3 cloves Garlic, minced
  • 1 Shallot, finely chopped
  • 60 milliliters Tequila
  • 2 tablespoons Lime juice
  • 180 milliliters Heavy cream
  • 1 tablespoon Tomato paste
  • 0.5 teaspoon Cayenne pepper
  • 2 tablespoons Fresh cilantro, chopped
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cups Cooked white rice, for serving

Directions

Step 1

Rinse the shrimp under cold water and pat them dry with paper towels. Season with salt and black pepper, and set aside.

Step 2

In a large skillet, heat the butter and olive oil over medium heat until the butter is fully melted and foamy.

Step 3

Add the minced garlic and chopped shallot to the skillet, and sauté for 2–3 minutes, or until fragrant and softened.

Step 4

Increase the heat to medium-high, then add the shrimp to the skillet. Cook for 2–3 minutes on each side, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

Step 5

Deglaze the skillet by carefully pouring in the tequila. Allow it to simmer for about 1–2 minutes, letting the alcohol cook off while scraping up any flavorful bits stuck to the bottom of the skillet.

Step 6

Stir in the lime juice, heavy cream, tomato paste, and cayenne pepper. Whisk the mixture until smooth and let it simmer over medium heat for 3–5 minutes to thicken slightly.

Step 7

Return the cooked shrimp to the skillet, mixing them into the sauce to coat evenly. Simmer for another 2 minutes until the shrimp are heated through.

Step 8

Stir in the chopped cilantro, reserving a small portion for garnish, and adjust seasoning with additional salt or black pepper if needed.

Step 9

Serve the shrimp and tequila sauce over a bed of warm white rice, garnished with the reserved cilantro.
