Wash the zucchini, onion, and bell peppers thoroughly. Trim the ends of the zucchini, peel the onion, and deseed the bell peppers.
Grate the zucchini using a box grater or food processor. Finely chop the onion and bell peppers.
In a large mixing bowl, combine the grated zucchini, chopped onion, and chopped bell peppers. Sprinkle the mixture with 2 tablespoons of salt and toss to combine evenly.
Let the vegetable mixture sit for 1 hour to draw out excess moisture. After an hour, transfer the mixture to a colander and press out as much water as possible. Pat it dry with paper towels if needed.
In a large stockpot, combine the white vinegar, granulated sugar, mustard seeds, turmeric, ground black pepper, and crushed red pepper flakes. Mince or crush the garlic cloves and add them to the pot.
Heat the mixture over medium-high heat, stirring until the sugar has dissolved completely.
