Ingredients

  • 2 cups Dried pinto beans
  • 8 cups Water
  • 6 slices Bacon
  • 1 large Onion, diced
  • 4 cloves Garlic cloves, minced
  • 3 medium Roma tomatoes, diced
  • 1 large Jalapeño, finely chopped
  • 0.5 cup Fresh cilantro, chopped
  • 4 cups Chicken or vegetable broth
  • 2 teaspoons Salt
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Butter (optional)
  • 8 pieces Tortillas (optional for serving)

Directions

Step 1

Rinse and sort the pinto beans to remove any debris. Place them in a large bowl and cover them with water. Soak the beans overnight, or for at least 8 hours.

Drain the soaked beans and set them aside.

In a large Dutch oven or heavy-bottomed pot, cook the bacon over medium heat until crispy. Remove the cooked bacon and crumble it into small pieces. Set aside.

Leave about 2 tablespoons of bacon grease in the pot. If there is excess grease, carefully discard it. If there's too little, you can add a tablespoon of butter for additional flavor.

Add the diced onion to the pot and sauté over medium heat for 5-7 minutes until softened and translucent.
