Ingredients

  • 6 whole Roma tomatoes
  • 3 whole Garlic cloves
  • 2 whole Jalapeño peppers
  • 1 whole Chipotle pepper in adobo sauce
  • 1 small Yellow onion
  • 1 bunch Fresh cilantro
  • 2 tablespoons Lime juice
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper

Directions

Step 1

Preheat a skillet or grill pan over medium-high heat. Add the roma tomatoes, garlic cloves (with skins on), jalapeño peppers, and the small yellow onion (cut in half with skin intact). Drizzle with olive oil and char everything until blistered and slightly blackened on all sides, about 8-10 minutes.

Step 2

Remove the garlic cloves and onion when they begin to soften and char. Allow the vegetables to cool slightly before handling.

Step 3

Peel the charred skins off the garlic and onion. For the jalapeños, decide if you want to adjust the spice level by removing seeds; otherwise, leave them intact for a spicier salsa.

Step 4

In a blender or food processor, combine the charred tomatoes, peeled garlic, onion, jalapeños, and the chipotle pepper in adobo sauce.

Step 5

Add the fresh cilantro (stems removed), lime juice, salt, and black pepper. Blend until smooth or leave slightly chunky, depending on your preferred texture.

Step 6

Taste and adjust seasoning if necessary. Add an extra pinch of salt or squeeze of lime juice to brighten the flavors if needed.

Step 7

Serve immediately with tortilla chips, or transfer to an airtight container and refrigerate for up to 5 days to let the flavors meld further.
