Ingredients

  • 1 cup basmati rice
  • 2 cups water
  • 2 tablespoons olive oil
  • 1 small onion
  • 2 large garlic cloves
  • 1 medium carrot
  • 1 medium red bell pepper
  • 0.5 cup frozen peas
  • 0.5 teaspoons turmeric powder
  • 1 teaspoon cumin powder
  • 1.5 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 2 tablespoons fresh cilantro
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Rinse the basmati rice under cold water until the water runs clear. Set aside.

Step 2

In a medium-sized pot, add 2 cups of water, a pinch of salt, and bring to a boil. Once boiling, stir in the rinsed rice. Lower the heat to a simmer, cover, and cook for 12-15 minutes, or until the rice is tender and the water is fully absorbed. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork and set aside.

Step 3

While the rice cooks, finely chop the onion, mince the garlic, dice the carrot and red bell pepper, and set them aside.

Step 4

Heat the olive oil in a large skillet or wok over medium heat. Add the chopped onion and sauté for 2-3 minutes until softened.

Step 5

Add the minced garlic and cook for an additional 30 seconds, or until fragrant.

Step 6

Stir in the diced carrot and red bell pepper, cooking for 4-5 minutes until the vegetables begin to soften.

Step 7

Add the frozen peas, turmeric powder, and cumin powder. Stir well and cook for another 2 minutes.

Step 8

Reduce the heat to low and gently fold in the cooked rice, ensuring it is evenly mixed with the vegetable-spice mixture.

Step 9

Drizzle the soy sauce and lime juice over the rice, and sprinkle in the salt and black pepper. Stir well to combine all the flavors.

Step 10

Sprinkle the freshly chopped cilantro on top and give it a final stir. Remove from heat.

Step 11

Serve warm and enjoy your 'Don't Worry Be Happy Rice' with a big smile!
