Ingredients

  • 2 pounds Ground beef (80/20 blend)
  • 0.5 pounds Ground pork
  • 1 cup Breadcrumbs
  • 0.5 cup Milk
  • 2 large Eggs
  • 1 medium Yellow onion, finely diced
  • 3 cloves Garlic cloves, minced
  • 2 tablespoons Worcestershire sauce
  • 0.5 cup Ketchup
  • 1 tablespoon Dijon mustard
  • 2 tablespoons Parsley, chopped
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 0.5 cup Ketchup (for topping)
  • 2 tablespoons Brown sugar (for topping)
  • 1 teaspoon Apple cider vinegar (for topping)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x5-inch loaf pan or line it with parchment paper.

Step 2

In a small bowl, combine the breadcrumbs and milk. Let the mixture sit for 5 minutes to allow the breadcrumbs to absorb the liquid.

Step 3

In a large mixing bowl, combine the ground beef, ground pork, soaked breadcrumbs, eggs, diced onion, minced garlic, Worcestershire sauce, ketchup, Dijon mustard, parsley, salt, black pepper, and paprika.

Step 4

Using clean hands or a spoon, gently mix the ingredients until just combined. Do not overmix, as this can result in a dense meatloaf.

Step 5

Transfer the meat mixture into the prepared loaf pan, pressing it down gently to form an even loaf shape.

Step 6

In a small bowl, whisk together the topping ingredients: ketchup, brown sugar, and apple cider vinegar.

Step 7

Spread the topping mixture evenly over the top of the meatloaf.

Step 8

Place the loaf pan in the preheated oven and bake for 55-60 minutes, or until the internal temperature reaches 160°F (71°C).

Step 9

Let the meatloaf rest in the pan for 10 minutes before slicing. This helps the juices redistribute and prevents it from falling apart.

Step 10

Slice and serve your 'Don't Let Your Meatloaf' with your favorite sides, such as mashed potatoes and green beans. Enjoy!
