Ingredients

  • 3 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 large (sliced) yellow onion
  • 4 medium (peeled and cut into chunks) carrots
  • 3 large (cut into 1.5-inch pieces) potatoes
  • 3 medium (cut into 1-inch pieces) celery stalks
  • 3 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Directions

Step 1

Season the beef chuck roast generously with salt, pepper, and garlic powder on all sides.

Step 2

In a large skillet, heat the olive oil over medium-high heat. Sear the roast for 2-3 minutes on each side until it develops a deep, golden-brown crust. Transfer the roast to the crock pot.

Step 3

Layer the sliced onion, carrots, potatoes, and celery around the roast inside the crock pot.

Step 4

In a medium bowl, whisk together the beef broth, tomato paste, dried thyme, dried rosemary, and Worcestershire sauce. Pour the liquid mixture over the roast and vegetables in the crock pot.

Step 5

Cover the crock pot with the lid and set it to low. Cook for 8 hours, or until the roast is fork-tender and the vegetables are fully cooked.

Step 6

Once done, remove the roast and vegetables from the crock pot and transfer them to a serving platter. Cover with foil to keep warm.

Step 7

To make the gravy, ladle about 2 cups of the cooking liquid from the crock pot into a small saucepan. Bring it to a simmer over medium heat.

Step 8

In a small bowl, mix the cornstarch and water until it forms a smooth slurry. Gradually whisk the slurry into the simmering liquid to thicken the gravy. Allow it to cook for 2-3 minutes, stirring constantly.

Step 9

Slice the pot roast and serve it with the cooked vegetables. Drizzle the gravy over the top, or serve it on the side.
