Ingredients

  • 2 pounds ground beef (80/20 blend)
  • 1 cup Italian-style breadcrumbs
  • 0.5 cup milk
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 large egg, beaten
  • 2 tablespoons Worcestershire sauce
  • 1 cup ketchup
  • 1 tablespoon mustard (yellow or Dijon)
  • 2 tablespoons brown sugar
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 0.5 teaspoon dried thyme

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.

Step 2

In a large mixing bowl, combine the ground beef, breadcrumbs, milk, chopped onion, minced garlic, beaten egg, Worcestershire sauce, salt, pepper, and dried thyme. Mix everything together gently with your hands or a spatula until just combined.

Step 3

Transfer the meat mixture into the prepared loaf pan. Use your hands to shape it into an even loaf, ensuring it’s compact but not overly packed.

Step 4

In a small bowl, whisk together the ketchup, mustard, and brown sugar to make the glaze. Spread half of the glaze evenly over the top of the meatloaf, reserving the other half for later.

Step 5

Place the loaf pan in the preheated oven and bake for 45 minutes. After 45 minutes, remove the meatloaf from the oven and spread the remaining glaze on top.

Step 6

Return the meatloaf to the oven and bake for an additional 15 minutes, or until the internal temperature reaches 160°F (71°C) for fully cooked ground beef.

Step 7

Remove the meatloaf from the oven and let it rest in the pan for 10 minutes to allow the juices to redistribute.

Step 8

Carefully lift the meatloaf out of the pan (if using parchment paper) or slice directly in the pan. Serve warm with your favorite sides like mashed potatoes and steamed green beans.
