  • 4 whole Red bell peppers
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 2 tablespoons Fresh parsley
  • 1 tablespoon Red wine vinegar

Directions

Step 1

Set your oven's broiler to high and position a rack about 6 inches from the heating element.

Wash the red bell peppers thoroughly and pat them dry.

Step 3

Place the whole red bell peppers on a baking sheet lined with aluminum foil for easy cleanup.

Broil the peppers for 4-5 minutes on each side, rotating using tongs, until the skin is blackened and blistered all around.

Remove the peppers from the oven and place them into a bowl. Cover the bowl tightly with plastic wrap and let the peppers steam for 10 minutes. This will make the skins easier to remove.
