Ingredients

  • 2 cups all-purpose flour
  • 1.5 cups rolled oats
  • 1 cup brown sugar, packed
  • 1 cup unsalted butter, melted
  • 0.5 teaspoons baking soda
  • 0.5 teaspoons salt
  • 2 cups pitted dates, chopped
  • 1 cup dried cranberries
  • 1 cup water
  • 1 teaspoons vanilla extract
  • 1 tablespoons lemon juice

Directions

Step 1

Preheat oven to 350°F (175°C) and grease a 9x13-inch baking pan or line it with parchment paper for easy removal.

Step 2

In a medium saucepan, combine the chopped dates, dried cranberries, and water. Cook over medium heat, stirring occasionally, until the mixture is thickened and the fruit has broken down, about 8–10 minutes.

Step 3

Remove the fruit mixture from heat and stir in the vanilla extract and lemon juice. Set aside to cool slightly.

Step 4

In a large mixing bowl, combine flour, rolled oats, brown sugar, baking soda, and salt. Stir to combine.

Step 5

Pour in the melted butter and mix until the mixture forms a crumbly texture.

Step 6

Press half of the crumb mixture firmly into the bottom of the prepared baking pan to form the crust.

Step 7

Spread the cooled fruit mixture evenly over the crust, using a spatula to smooth it out.

Step 8

Sprinkle the remaining crumb mixture evenly over the top of the fruit layer, pressing gently to adhere.

Step 9

Bake in the preheated oven for 25–30 minutes, or until the top is golden brown.

Step 10

Remove from oven and let the bars cool completely in the pan before slicing into squares or rectangles.

Step 11

Serve and enjoy! Store any leftovers in an airtight container for up to 5 days.
