Ingredients

  • 3 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 0.25 cups chopped green onions
  • 0.5 cup cooked and crumbled bacon
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1.5 cups breadcrumbs (panko or regular)
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 cups vegetable oil (for frying)

Directions

Step 1

In a large mixing bowl, combine the mashed potatoes, shredded cheddar cheese, chopped green onions, crumbled bacon, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

Step 2

Using your hands or a small ice cream scoop, portion out the mixture and roll it into golf-ball-sized balls.

Step 3

Arrange three separate bowls: one with flour, one with beaten eggs, and the third with breadcrumbs.

Step 4

Roll each mashed potato ball first in the flour, then dip it into the beaten eggs, and finally coat it in breadcrumbs. Ensure each ball is fully coated at every step.

Step 5

Place the coated mashed potato balls on a plate or tray and refrigerate for 15 minutes to help them firm up.

Step 6

While the potato balls are chilling, heat the vegetable oil in a deep fryer or large heavy-bottomed pot to 350°F (175°C).

Step 7

Carefully add a few mashed potato balls to the hot oil at a time, making sure not to overcrowd the pot. Fry for 2-3 minutes or until golden brown and crispy on all sides.

Step 8

Remove the fried potato balls with a slotted spoon and place them on a plate lined with paper towels to drain any excess oil.

Step 9

Repeat the frying process with the remaining mashed potato balls.

Step 10

Serve warm with your favorite dipping sauce, such as ranch, sour cream, or spicy ketchup.
