  • 2 cups Masa harina (corn flour)
  • 1.5 cups Warm water
  • 1 cup Cooked chicken (shredded) or refried beans
  • 1 cup Vegetable oil
  • 4 medium Tomatoes
  • 1 small White onion
  • 2 Garlic cloves
  • 1 cup Fresh queso fresco (crumbled)
  • 2 cups Cabbage (shredded)
  • 2 tablespoons Fresh cilantro (chopped)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 Lime (optional, for garnish)

Directions

Step 1

In a large mixing bowl, combine the masa harina and warm water to form a soft dough. Knead for about 5 minutes until the dough is smooth and pliable. Cover with a damp cloth to keep it from drying out.

Step 2

For the filling, prepare the shredded cooked chicken or refried beans. Season with a pinch of salt and pepper. Set aside.

Step 3

To make the tomato sauce, blend the tomatoes, onion, garlic, salt, and pepper in a blender until smooth. Pour the mixture into a small pot and simmer over medium heat for 10 minutes. Adjust seasoning as needed.

Step 4

Divide the masa dough into 8 equal balls. Flatten each ball into a circle about 6 inches in diameter using a tortilla press or by placing the ball between two sheets of plastic and pressing it flat.
