Ingredients

  • 8 cups Zucchini
  • 0.5 cups Lemon juice
  • 1.25 cups Granulated sugar
  • 0.5 cups Brown sugar
  • 2 teaspoons Ground cinnamon
  • 0.25 teaspoons Ground nutmeg
  • 1 cup Butter
  • 2 cups All-purpose flour
  • 1 cup Quick oats
  • 1 teaspoon Baking powder
  • 0.5 teaspoons Salt

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel the zucchini and slice into small bite-sized pieces, mimicking the size and shape of apple slices.

Step 3

In a large saucepan over medium heat, combine the zucchini slices and lemon juice. Cook for 5–7 minutes, stirring occasionally, until the zucchini becomes tender.

Step 4

Stir in 1 cup of granulated sugar, brown sugar, cinnamon, and nutmeg with the zucchini. Cook for an additional 2–3 minutes, allowing the mixture to thicken slightly. Remove from heat and set aside.

Step 5

In a large mixing bowl, combine the flour, quick oats, remaining 0.25 cups of granulated sugar, baking powder, and salt.

Step 6

Melt the butter and pour it into the flour mixture, stirring until the mixture becomes crumbly.

Step 7

Grease a 9x13-inch baking dish with nonstick spray or butter.

Step 8

Press half of the crumb mixture firmly into the bottom of the prepared baking dish to form the base layer.

Step 9

Spread the zucchini filling evenly over the base layer.

Step 10

Sprinkle the remaining crumb mixture on top of the zucchini filling, patting it down gently to create an even topping.

Step 11

Bake in the preheated oven for 40–45 minutes, or until the topping is golden brown and the filling is bubbling.

Step 12

Allow the cobbler to cool for at least 10 minutes before serving. Serve warm with a scoop of vanilla ice cream or whipped cream, if desired.
